I'm already using 2.5.2b1 and I've been working on several solution
trials with Brian Criscuolo and also Pete (from the support team): I
just gave up!

I was advised to use the terminal with the following line of commands
that (I believe) could fix the problems with Sync Service corruption
data:
>> "sudo killall SyncServer syncuid; rm -rf ~/Library/Application\
>> Support/SyncServices"

... two trials and a lot of restarts after this, it didn't fix any
problem.

Finally I tried one other thing:

I deleted ALL my calendars on iCal and created just 2 new ones.
Created just 3 events and 2 tasks (plain things, no strange
characters, nothing strange):
Missing sync could not write those simple few things on my empty
device's calendar!!!
... now I'm forced to pay a lot more attention on costumers (bad)
reviews on this software although I'd strongly love to find a
solution which, after this final trial, I don't believe there is.
