Windows Mobile devices are Unicode based devices.
Address Book and iCal store all of their information as Unicode.

Because both of our information sources are Unicode based, we don't  
do any translation or mapping of individual characters.  Mostly, we  
just have to move the bytes back an forth.

I would not expect characters to change when moving from Mac OS to  
Windows Mobile, but if you are seeing problems please let us know the  
details.  It's possible that different Mac OS fonts might not have  
the characters and something unexpected might get displayed.  You  
might try changing the International System Preferences to use  
Chinese first, and see if the names get displayed differently.
