[missing-sync-winmobile-talk] Synchronisation problem ... Or am I
doing something wrong ?

This behavior sounds as if your Address Book data is not updating the
Sync Service data. The Missing Sync actually syncs with the Apple
Sync Service data, which must only have the "My Card" and Apple
computer data.
Try this:
1) Open Address Book and choose Back up Address Book from the File
menu. Save the file to your desktop.
2) Then choose Revert to Address Book Backup from the File menu and
choose the backup file you made in step 1
3) When Address Book is done importing your contacts, quit Address Book.
4) Launch iSync
5) Choose "Preferences" from the iSync menu
6) Make sure that the "Enable syncing on this computer" is selected.
If it was not, that might explain why Sync Service only had a portion
of your data.
7) Select the "Reset Sync History" button. This may take a few
minutes. You'll notice at the bottom of the iSync window the status
of the reset. When the reset is complete that bottom area will be
clear and the Reset Sync History button will be enabled again.
8) Restart your Mac
9) It would be best to clear your device using the Start > Accessores
> Clear Storage option on the Qtek 8310 (I have the same phone) :-).
Note that this will erase all the data and apps on your device. You
could try to sync without this step if you wanted.
10) Connect and Sync
