I assume you want to prevent the "Sync Reminder" dialog for this device. The
next time you get that dialog, notice the check box in the bottom left of
the dialog that will prevent the reminder for that specific device. Check
that, and that specific device reminder will never show again.

The new device name should now be displaying when you are connected. There
is no other "data" for the old device that you need/want to delete. If you
want to prevent the Sync Reminder that was covered above.
