We've had a lot of people ask us about multi user support. You are taking the right approach by setting up different Mac OS X users for each handheld device.
And yes, this is something we have been testing with the upcoming Missing Sync for Windows Mobile release. Multi users and Fast User Switching are supported.

I'm a little new to the mac world, and of course have a Pocket PC (an
old HP Jornada 568 which works well for me) and so does my wife (an
HP iPAQ 1935). I have setup separate user accounts on our iMac G5
(Tiger). I initially purchase PocketMac because of the Tiger
compatibility, but could only get one account to work. After several
iterations of email "support" I gave up and got a refund. Please
confirm that you have tested your upcoming Tiger version of Missing
Sync for Pocket PC on a computer with multiple user accounts that
sync to separate PDA's. Also advise if I can install it once on the
computer, or twice (once in each user account).
