Syncing of birthdays from contacts to iCal like how Active Sync does it
with Outlook would be a good feature.

Better syncing of categories for appointments.  Currently you can assign
everything from your PPC to one category in iCal only.

Integration with Mail.app would be desirable, much like how outlook
works with PPC.
