Putting on my devil's advocate hat for a minute.
Why would you want to do server-server-client when you can do
server-client?
Missing Sync lets you share your internet connection to your Pocket PC,
and you can easily configure Inbox to download email directly from your
POP or IMAP server.
Personally, I use IMAP for all of my email because I like to read it on
multiple machines, but even back when I had to use POP, I would
frequently leave mail on the server just so I could read it from
another computer.
What added benefit do people see/get in syncing email to a client
application instead of to your email server?
