Here's what I do:  It's not the same as a mail sync, but with the 
amount of mail I get, a sync just wouldn't make sense with such a 
small amount of storage space.  I set my email accounts on the hiptop 
to POP messages, but leave them on the server.  This way, the next 
time I check on my Mac, I don't miss any messages.  Since I also use 
a  Sony Ericsson T637 Bluetooth phone, I use Salling Clicker 
(http://www.salling.com/) to sense when I'm away from my desk.  When 
I am, an AppleScript I wrote runs and tells Eudora to stop checking 
mail.  This makes my email grabbing seamless: When I'm at my desk I 
always have all email, but when I physically am not in proximity of 
my desk, any new messages are first picked up on the hiptop.  If 
you'd like more information or the script I wrote, let me know.  I 
know that this can be done for lesser email clients too, like MS 
Entourage, and I'm not sure about Apple Mail, but I'd assume you 
could write one.
